Confession.
I've never been a fan of celery. It carries a significant amount of bitterness not to my liking.
That is...until I discovered this amazing salad! The salad not only takes away the bitterness of the celery, but the rest of the components complement it so well!!
It's filling, it's healthy, it's natural. It's delicious.
6 stalks celery
1 small red apple
1 cup fresh spinach
3-4 medjool dates
¼ cup chopped almonds
2 ½ tbsp red dry wine
2 tbsp freshly squeezed lemon juice
1 cup Greek yogurt
1 tbsp + ½ tsp red wine
1 tbsp + ½ tsp date syrup
1 tsp tahini
½ tsp freshly squeezed lemon juice
Cut celery and apple into small cubes. Place in medium bowl.
Chop spinach and dates into small strips and add to the bowl.
Add chopped almonds to the bowl.
Pour in 2.5 tbsp red wine and 2 tbsp lemon juice to the bowl and mix everything well.
There you have it! Unless you want to ELEVATE the salad, continue with the instructions!
Arrange the salad around your plate. Leave a hole in the middle.
In a small bowl, mix yogurt, red wine, tahini, date syrup and lemon juice. Add to the middle of your salad. Top with apple slices and drizzle with tahini. Yum!
